With absolutes you usually have to draw two graphs.

Explanation:

When $x \ge 0$ the absolute bars have no function, and you graph $2 x + 1$

When $x < 0$ the bars will flip the sign, and the function becomes:
$f \left(x\right) = - 2 x + 1$

They will meet at $x = 0 , f \left(x\right) = 1 \to \left(0 , 1\right)$
