The xx-intercepts will be when y=0y=0

Explanation:

This happens when x=2orx=-1x=2orx=1, so the xx-intercepts will be at (-1,0)and(2,0)(1,0)and(2,0)

The axis of symmetry will be halfway between them, when
x=(-1+2)/2=1/2x=1+22=12

The vertex will be on the axis of symmetry:
x=1/2and y=-(1/2-2)(1/2+1)=2 1/4x=12andy=(122)(12+1)=214
Or:
(1/2,2 1/4)(12,214)
graph{-(x-2)(x+1) [-5.97, 8.08, -2.825, 4.2]}
