With so many satellites orbiting our planet, why are there so few images of earth from space?

Most of our satellites ofbit too low. Luckily we have one about 240,000 miles up.

Explanation:

Most of our satellites are in low earth orbit, roughly 100 miles up. Compared with a diameter of about 8000 miles that is just not enough to see a large portion of the Earth. Geosynchronous satellites at an altitude of about 22,000 miles are better, but to get a really good panorama we can go to the Moon. See here:
