It is resonance that selects the frequency that the instrument plays.
Explanation:
When a piano wire is struck, it makes a bunch of noise at various frequencies. The wire is a certain length, a certain density, with a certain tension. This adds up to a certain frequency at which the wire will resonate. That is what you hear.
