Embalming fluid contains the simplest aldehyde, #H_2C=O#, and was traditionally used by undertakers. Acrolein, or propenal, #H_2C=CH-C(=O)H# has a pretty foul odour, and it is responsible for the penetrating smell you get from old cooking oil in fish and chip shops. Benzaldehyde, #PhC(=O)H#, is used to impart almond flavour. Cinnamaldehyde, #"trans-"PhCH=CH-C(=O)H#, is the essential oil you get from cinnamon bark (finally a nice smell!).
